All dishes are served on traditional East African style flat bread called BUDENAA.  Traditionally the food is eaten with your hands by breaking pieces of the Budenaa off and scooping up the sauces with it.  Also, traditionally three to four people share one big platter of food.  This is how we serve the family style dishes.

Introduction to African Restaurant Foods

Budenaa: Thin, spongy pancake-like flatbread made from barley, rice and wheat flour  and fermented over night for flavor. When available, Budenna is made with imported Tafii flour.


Alichaa:  A yellow based stew that is simmered with several herbs, but not hot and spicy 


Berbere: Imported ground spices composed  of paprika, salt, ginger, onion, garlic,  ginger, cloves, cinnamon, nutmeg, cardamom, allspice, coriander, and red  pepper. 


Qimamii: Spicy butter made from boiling onion, garlic, ginger, cinnamon, turmeric, cardamom, clove,and nutmeg in butter.


Tafii:   Ancient grain of Oromia available in whole-grain form as well as ground Traditionally used to make Budenaa

5.  Ashaakiltii:   Cabbage and carrots and onions sauteed in a blend of exotic herbs


6.  Alichaa Misira: Lentils simmered in a yellow sauce with turmeric, onions, green peppers,garlic and ginger root


7.  Kochee Misira: Lentils simmered in a spicy berbere red pepper sauce and seasoned  with garlic and ginger root and serrano green peppers


8.  Kochee Shiro:  Imported ground split peas simmered in a spicy berbere sauce  and seasoned             with garlic, onions, and serrano green peppers


9.  Raafuu:   Collard greens cooked with onions, green pepper, garlic, oil and ginger root


10.  Dimaa:  Red beets and potatoes simmered in a blend of exotic herbs


11.  Dabaqula: Yellow squash sauteed and seasoned with onion, garlic and other mild spices
